چکیده
Rosehip is among the most important plants with high economic value, mainly used in foods and beverages from ancient times to present. In this study, Rosa canina L. pimpinellifolia roots, consumed as tea Aktoprak Village of Erzurum province, were collected together fruits. The main goal study was investigate vitro bioaccessibility phenolic compounds roots fruits R. by a simulated gastrointestinal digestion procedure. Methanolic aqueous extracts prepared for analysis whereas only methanolic analyses Total total flavonoid contents evaluated spectrophotometrically, while four different methods antioxidant capacity measurements. quantification individual acids, flavonoids, anthocyanins performed HPLC-PDA. Results demonstrated that have levels phenolics, capacity. observed contain higher amounts phenolics compared Epicatechin, 4-hydroxybenzoic acid, gallic syringic p-coumaric naringenin, ellagic acid not determined fruit canina, they detected roots. Bioaccessibility carried out on root showed recovery 12.73% 10.71% pimpinellifolia, 0% both species.
